This was my first time trying to make these/ coming up with my own recipe, and I think these turned out pretty well!

  • 4 large ripe bananas (mashed)
  • 1 whole egg
  • 3 egg whites
  • 2 tsp vegetable oil
  • 1/2 cup 2% milk (or Coconut Milk, or any milk alternative)

Breakfast:

3 Egg Whites

1 Whole Egg

1 Roma Tomato

1/8th cup onions

1/4th cup spinach (frozen)

Salsa

Lots of Red, Yellow and Orange Bell Peppers

Healthy-Girl Bakes: Banana Protein Muffins

This was my first time trying to make these/ coming up with my own recipe, and I think these turned out pretty well!

Ingredients

  • 4 large ripe bananas (mashed)
  • 1 whole egg
  • 3 egg whites
  • 2 tsp vegetable oil 
  • 1/2 cup 2% milk (or Coconut Milk, or any milk alternative)
  • 1 tsp vanilla
  • 1/2 tsp cinnamon
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 5 Scoops Sunwarrior Warrior Blend Protein ( for about 80g protein, you may need less scoops for other protein brands)
  • 2 cup oats (use a blender to turn them into a fine, flour like consistency)

Directions:

  1. Pre-Heat the oven to 350 °F
  2. Mix the Mashed Bananas, eggs, oil, milk, cinnamon, vanilla, baking soda and baking powder together in a bowl
  3. After those ingredients are mixed, slowly add in the oat flour mixture and the protein until mixed completely
  4. Pour batter into lined or greased muffin tins
  5. Bake for 20 - 25 minutes, or until you can stick a toothpick in the muffins, and the come out clean.

Depending on what size pan you use, you can make between 12 and 36

I made 12 big muffins which came out to about 106 calories each, and 12 mini muffins (roughly 4 big muffins) which  came out to about 35 calories each.

EDIT: I didn’t add any sweetener. 1) because I’m trying to wean myself off sweets, and 2)because my bananas were SUPER ripe. Feel free to add sweetener to taste if you need it!!

Egg White Scramble with bell peppers and onions

Healthy-Girl Cooks: Homemade Vegetarian Lentils

This is perfect for if you’re on the go and don’t have time to cook everyday!

This is also super helpful because the cost per serving is super cheap!

Ingredients:

  • 16 oz package lentils
  • 4 celery stalks
  • 25 baby carrots (or 3 normal carrots)
  • 1 onion
  • 4 cloves garlic
  • 6 small red potatoes
  • 1 tbsp dried thyme leaves
  • 1 tbsp oregano
  • 1 can diced tomatoes (or 2 fresh ones)
  • 2 cans vegetable broth (4 cups)
  • 2 cups water
  • Salt & Pepper to taste

Directions:

Dice the celery stalks, carrots, and onions. Cut the red potatoes in half 4 times, and mince the garlic cloves.

 Take all of the ingredients above and put them into your crockpot and let on high cook for 5-10 hours (depending on how good your crockpot is)

It doesn’t look like much now because it hasn’t started cooking yet, but it looks amazing when its done! (pictures to follow)

EDIT: You can use a normal pot to cook lentils as well, but you have to cook it them 15 minutes to an hour or so depending on how tender you want them. I’ve never cooked them this way though, so I don’t know how well that will work with all the ingredients.
